Job Description: Assistant Food and Beverage Manager Department: Food and Beverage Reports to: Food and Beverage Manager Location: Wild Rose Casino & Hotel Jefferson, IA Position Summary: The Assistant Food & Beverage Manager will assist in overseeing and supervising our dynamic food and beverage department. With comprehensive authority, you will help provide and direct all facets of our food and beverage operations, including the bar, restaurant, and kitchen, ensuring strict compliance with health department regulations. Your responsibilities will encompass a range of duties, including but not limited to scheduling and supervising food and beverage staff, managing inventories, facilitating orders, conducting staff training, creating, and maintaining budgets and revenue projections, developing, and implementing policies and procedures, overseeing cash control protocols, and efficiently resolving guest complaints. Your pivotal role will contribute to the seamless functioning and success of our food and beverage operations, with a focus on creative menu creation, precise costing, and vigilant cost controls. Essential Duties and Responsibilities: Menu Planning and Pricing: Develop innovative and enticing menus for the casino bar, bar and grill, and banquet facilities. Analyze market trends, customer preferences, and competitor offerings to ensure competitive and appealing culinary selection. Implement pricing strategies that align with the overall business goals and maintain profitability. Guest Experience: Focus on delivering exceptional guest experiences by maintaining high standards of service, quality, and cleanliness. Regularly monitor customer feedback and implement improvements based on reviews and comments. Train and motivate staff to provide outstanding customer service and create a positive atmosphere for guests. Operational Management: Oversee the day-to-day operations of the casino bar, bar and grill, and banquet facilities. Monitor inventory levels, order supplies, and ensure efficient stock rotation to minimize waste. Collaborate with the kitchen and bar staff to maintain high food and beverage quality standards. Technology Integration: Stay informed about new and emerging technologies in the food and beverage industry. Implement and optimize technology solutions for ordering, inventory management, and staffing to enhance efficiency. Utilize point-of-sale (POS) systems and other relevant technology to streamline processes. Staffing: Recruit, train, and manage a skilled and motivated team of kitchen and service staff. Develop and implement staffing schedules that align with business demand. Conduct regular performance evaluations, provide feedback, and support professional development Supervisory Responsibilities: Back of house staff Front of house staff Culinary team Qualifications and Requirements: Gaming License Must be able to obtain and retain, through IRGC, a state of Iowa gaming license. Position Experience: Proven experience as a Food and Beverage Manager or similar role in a high-volume hospitality setting. In-depth knowledge of menu planning, pricing strategies, and industry trends. Strong leadership and organizational skills with the ability to multitask in a fast-paced environment. Excellent communication and interpersonal skills to interact effectively with guests, staff, and management. Familiarity with point-of-sale systems and proficiency in utilizing technology for operational enhancements. Understanding of health and safety regulations and ability to ensure compliance. Education: Bachelor's degree in hospitality management, Business Administration, or related field is preferred. Interpersonal Skills: Excellent internal and external guest service skills are required. High degree of EQ required. Proven and demonstrated organizational and leadership qualities. Must be able to work cohesively, as a team, with members of all levels of the organization including senior leadership-Suite members, and owners. JOB PURPOSE: Responsible for all operational aspects of all food and beverage units in their respective area. KEY DUTIES AND RESPONSIBILITIES Communicate with the Food and Beverage Manager on all aspects of the Food and Beverage Department. Assist Food and Beverage Attendants and Unit Leads in all phases of stand operation. Opening areas are to make sure all stands are ready to operate at the proper opening times. Closing areas are to make sure all stands are properly shut down, equipment is turned off and all paper work is completed correctly and turned in to its appropriate place. Be aware of all equipment failures and malfunctions and report to Food and Beverage Manager Responsible for seeing that all team members are in proper uniforms and meet the park grooming codes. Maintain budget boundaries. Help maintain a quality and portion control standard on all food items. Ensure proper PPE is worn at all times. Ensure temperature logs are being filled out every two hours. Work on continuously training and coaching all team members. Must be available to work all shifts whether they are morning, afternoon, or evening hours and be available to work Monday through Sunday. Responsible for monitoring equipment and facilities to ensure proper maintenance. Practice safety methods, and techniques to ensure work areas are safe. Eliminate unsafe physical conditions, equipment, and machine hazards, and other risks in human and operational performance which may cause injury to persons, damage to property, or cause other losses.
